  • 4 medium sebago potatoes scrubbed

  • 70g butter softened

  • large pinch of smoked paprika
  • 1 tablespoon finely chopped fresh flat leaf parsley leaves

  • 2 medium red onions thinly sliced
  • salad leaves to serve
